
You guys seemed to really like the Quick Chicken Tetrazzini I made..so here is another easy peasy recipe!!
Nutty Stuff Chicken (adapted from Kraft.com)
4 boneless skinless chicken breasts (butterflied)
1 box whole wheat stuffing mix
1 can cream of chicken soup
1/2 package frozen southwestern seasoning (green/red pepper and onion blend-freezer section)
1/2 cup pecans chopped
1-1 1/2 cup orange juice and butter (for stuffing mix)
Oven at 350
Put thawed chicken in a 13x9 baking pan
Top with sw mix and soup
Cook stuffing using orange juice instead of the water (as directed on the box)
and butter (as directed on the box)
Once stuffing is 'cooked' mix in the pecans then top your chicken/soup/veggies with stuffing
Bake for about 35-40 minutes or until chicken is done and stuffing is nice and crispy!
This dinner was super quick and super easy..and we have leftovers!
Kraft had their
original recipe at 410 calories per serving...but when I plugged my recipe info into caloriecount.com (what I'm using to track calories) it was about 280! Yay!
The pecans add a nice texture from the squishy stuffing and crunchy stuffing (Yes, you get both!)-and the cream soup of course makes a nice 'gravy'.
