Moist, dark chocolately, nutty, DIVINE...and yes..ONLY 78 calories!! Oh..and .05 fat grams...yes...true! When my Mom bought me a "Fat-Free" cookbook..I rolled my eyes. In fact I might have said something like "Thanks for the cooking with cardboard book". BUT since I'm trying to lose some weight...yes I'm still trying..even though I've kinda taken a couple weeks off...I thought it couldn't hurt to try something else...a recipe from the book! Also..I had a sweet potato that I needed to use up... what? Yes...these brownies have sweet potato in them!! Georgia Fudge Bars (adapted from Fat-Free Baking) 1/3 cup flour 1/3 cup wheat bran 1/3 cup dark cocoa powder 1 cup sugar 1/8 teaspoon salt 1/2 cooked mashed sweet potato 3 egg whites 1 teaspoon vanilla 1/3 chopped pecans Mix dry-add wets-fold in nuts. Put in a greased 8inch square pan and put in the oven at 325 for 30-35 minutes(time might vary) Look for firm edges and almost set center. Let cool. Let me say that again b/c it's REALLY important. LET IT COOL. The center needs time to set..and honestly..they are SO much better on day two. No really. Now..the REAL test. Husband. Husband who is a choco-holic. Who only likes chocolate cake mix cakes b/c anything I make 'isn't chocolately' enough. Who is a brownie SNOB (again..from a mix only). And despises sweet potato (unless it's in the form of sweet potato casserole at Thanksgiving, and even then he'll only eat ONE serving). Myself though..I LOVE sweet potato...but that is a post for another day. Husband LOVED these brownies. He finished them off last night and proclaimed that he would eat them OVER "real" brownies ANY day. WHAT?! True. THAT good! I think that using the dark cocoa REALLY amped up the delectableness (yes, I made that word up). Using the pecans for a crunch is just yummy. The bran adds a nutty flavor to the brownie as well! Delicious...nutritious...tastes just like....brownies!!!
